Sangaweech, Melbourne
Italian Sandwich Shop · Lygon Street, Melbourne
Most new businesses open with a hope and a hunch. Sangaweech opened with data.
Joel Hales, Executive Chef at Sangaweech on Lygon Street, Carlton, had a head start that most startups don’t. His sister venue, Jonny, Vince & Sam’s, was already running on Tabit. He’d seen what the platform could do at volume. When it came time to launch Sangaweech, an authentic Italian sandwich shop, the decision was straightforward.
Proven at scale next door. Built from scratch for a completely different concept
Built for the Way They Work
Sangaweech isn't a restaurant. It's a deli, with a high-volume counter service workflow built around a single product built to order, an Italian sandwich, from bread slice to wrapping. Off-the-shelf wasn't going to cut it.
Joel worked directly with the Tabit team to build something bespoke.
This is where Tabit’s flexibility sets it apart from generic POS solutions. Rather than forcing Sangaweech into a standard restaurant workflow, the system was configured around the specific production sequence of their product, every modifier, every build step, every station mapped to how the kitchen actually works.
The right system isn’t one-size-fits-all. It’s one that fits your operation
Data as a Competitive Advantage
For a startup, the backend is where the real edge lives. Most new businesses operate on instinct for the first year. Sangaweech didn't have to.
"Being a new start-up business, the data on the back end with Tabit is so crucial for us to see where we need to be with numbers, what's selling, average time on the build of the sandwich and allows us to review that and become better at what we need to do."
Knowing your average prep time is the difference between a smooth service and a bottleneck
That granularity, sales by item, production time by product, performance over time, is the kind of intelligence that gives a new business the confidence to make decisions fast. For Sangaweech, it means every service is an opportunity to improve, not just repeat.
